I love what I call "lightbulb" moments. I love the reaction students have when they have been struggling with a concept and it all of a sudden clicks, and they see the results of the hardwork they have been doing.
What I enjoy most is watching a kid start to get excited about the material as they get mire comfortable with it. What I love the most about math is how all the smaller concepts connect with each other.
